Composition

I was utterly smitten with these mushrooms that the village greengrocer stocked in the fall. I had never seen them before, with delicate sort of hairs underneath instead of gills. In French they are called 'pied de mouton' (sheep's foot) but in English they appear to be called: Hedgehog mushrooms! Which honestly makes me love them even more. They are absolutely delicious, sauteed in butter and served simply with some goat's cheese on toast or with eggs, maybe thyme of parsley.
