The Egg Yolk and the Recipe
There are two very special things in this still life: the family favorite recipe I penned onto an old book page for this image and the egg dish. An basketweave ceramic piece with an egg for a handle, produced by Sarreguemines around 1920, it was one of the first pieces I found and bargained for by myself from a brocante in Paris and I can still see the street and feel the cold that day more than 12 years ago.
The recipe is for David Eyre's Pancake which my mother copied down from the New York Times Cooking in 1966. We made it over and over when I was young, often with apple slices sautéed with butter and cinnamon, it was the first thing I ever cooked for my husband, and I make it many a weekend now. We call is Puff Pancake too and it is very close to a dutch baby (the proportions might be different?). Simple and satisfying
